ingredients: 40 cloves garlic, chicken (bone in skin on legs or thighs), salt, pepper, olive oil, thyme.
method:Peel 40 cloves of garlic. Season chicken with salt and pepper. Using a dutch oven, fry chicken in olive oil. Work in batches if necessary. Once chicken has a nice sear and skin is crispy, add 40 cloves of garlic to pot and a sprig of thyme. Add more olive oil only if pot looks really dry. Add lid and bake for an hour. Chicken will be fall off the bone and don't forget to plate the garlic!
